Fuel for the alaskan spirit. In 1917 when the Alaska Railroad was built through the Matanuska Valley, workers discovered that the soil in the area was ideal for farming. This area would later become the City of Palmer which today is the largest producer of potatoes in Alaska. In 2003 we went to Palmer and met with farmers to make a potato chip from local potatoes. Alaska Grown potatoes have a shorter growing season but grow all night long under the midnight sun, and that makes them just right for making potato chips. We slice our potatoes thick and cook them by the batch in gourmet cooking oil. When the chips turn a golden color we remove them from the kettle and they are hand seasoned.
